Healthy Banana Blueberry Loaf

I have been wanting to make a banana loaf for some time now. I've seen so many bloggers/ healthy food fanatics rave about how great it is and I wanted to give it a go for myself. 
Firstly this is one of the easiest loaves / cakes I have ever made and tastes pretty darn good considering there's no actual sugar added into this. 

Ingredients you will need : - 

3 large over ripe bananas
2 tablespoons of lemon juice 
1/3 cup almond milk
1/2 cup agave nectar
1 1/2 cups whole white or wheat self raising flour
1/2 cup almond flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1 cup blueberries
sprinkle of salt



Set your over to 180 degrees Celsius. 
Add you lemon juice and almond milk together in a bowl and let it sit and curdle for a while, mine took about 20 minutes before it started to get a curdled consistency. Whilst that's happening add all you dry ingredients in one bowl and all your wet into another. 


Once you've mixed them together separately, mix them together. 


Throw in your blueberries and give it a good mix around. At this point you can add whatever you choose, or pop in some walnuts or pecans for a little extra protein. Line a baking tin or grease it with some butter


pop it into the oven and leave for around 45 minutes, Don't remove it until the top is wonderfully golden. Once out leave for around an hour to cool. In all honesty this is the first time I have left something to cool and it's popped out of the tin wonderfully. 



I cut mine into large chunks and then stored most of them in an airtight container as then this will last you well over a week.
